Cauliflower Soup

Sneak in this vegetarian dish this week. Perfect for meatless mondays. 😉 This cauliflower soup is filling and really healthy….
I think one tends to forget how easy soups are to make and how nutritious dense they are.

For fussy little eaters, this soup is great! If you ask my daughter which soup she would like for dinner, her answer is always cauliflower soup!
If your diet allows it add a little cream before serving or a few small blocks of cheese. The little ones really like the idea of fishing out the cheese bits from their soup.

This soups takes +/- 20 minutes to make from start to finish and pretty much use basic ingredients that you are bound to have in your cupboard and fridge. This is a good soup when you are trying to shed a little weight. Being filling you will feel satisfied. I use my pressure cooker for most of my soups that I make, I just love it. But stove top will also work great.

Cauliflower soup....Mmmmm....

Cauliflower soup

Serving size : +/- 6
Cooking time : 20 – 25 minutes

Ingredients

1 medium head of cauliflower (roughly chopped)
1 medium carrot (Roughly chopped)
An onion (Roughly chopped)
1 teaspoon garlic
2 leeks (Optional, and chopped)
2 celery sticks (Optional, and chopped)
Olive oil for frying
4 cups of water (Boiling)
1 vegetable stock cube
salt & pepper to taste
Cubes of cheese (Optional)

Method

Heat your pot or pressure cooker. Add in just enough oil, about 2 teaspoons.
Roughly chop the onion and add to your hot oil, fry for a minute now add the garlic and fry for another minute. Now add in the the rest of the vegetables and fry for a further 2 – 3 minutes.

Add the water and stock cube. Allow this to boil for +/- 20 minutes.
If you are using a pressure cooker, seal the lid on the pot and set your pressure cooker for 15 minutes on high.

Once your soup has cooked use a stick blender and blend your soup until smooth. Add in salt and pepper to taste.

When you are ready dish up your soup into soup bowls. If you are adding the cheese, add cubes of cheese to each bowl.
