Brownies vs. Blondies

Brownies vs. blondies…. How will you ever know which is the best? Personally I love blondies, but nothing beats a brownie with coffee…. Mmmm…. Choices, choices. Why not make them both and decide for yourself which are the best.

What is the difference between brownies vs. blondies?

Both of these delicious desserts resemble a fudgy, cakey square.
Chocolate Brownies are traditionally made with milk or dark chocolate melted and mixed into the batter. The secret is definitely in the batter. Take care not to over mixed it. By doing this it allows a fudgy, slightly chewy and dense texture to develop. Often only a quick stir to combine all the ingredients are done. Traditionally brownies has chopped nuts added into the mixture and sometimes extra chocolate chips are also added to power up the chocolaty taste. 😋

Although the ingredients in blondies are very similar to brownies, the main difference is swapping milk or dark chocolate for white chocolate and the addition of Vanilla essence.

Below I have two great tried and tested recipes. Try both, and see for yourself who will win the battle – Brownies Vs. Blondies.

Brownies

Start by heating your fan assisted oven to 180 ËšC and prepare a 9 X 13-inch (20 X 30 cm) square baking pan or glass bowl with the same measurements, by greasing it good. Now add a layer of foil over this, and make sure that you have a good overhang. This will help you lift your baked brownies out of the pan later. Remember to grease the foil layer as well.

This recipe makes +/- 24 brownies, cut into 5 cm blocks (2-inch)

Ingredients

80 ml cocoa powder
155 ml boiling water
60 ml unsalted butter, melted
50g dark or unsweetened chocolate, finely chopped
150ml sunflower oil
2 eggs
2 egg yolks
30ml Vanilla extract
2 ½ cups white sugar
1 ¾ cups all-purpose flour
¾ teaspoon salt
250ml chocolate chips

Instructions

Whisk the cocoa powder and boiling water together in a large bowl until smooth. Add the dark or unsweetened chopped chocolate and stir until dissolved.

Whisk in the melted butter and oil into your chocolate mixture.
Add the eggs, egg yolks and vanilla extract and whisk until smooth. Now add in the sugar and stir until combined. Add the flour and salt and mix with a rubber spatula until just combined.
Fold in the chocolate chips.

Scrape the batter into your prepared pan and bake for about 30-35 minutes. Or until it is done. Test this by inserting a toothpick into the baked brownies. If it comes out clean, it is baked.

Transfer the pan to a wire rack, and allow it to cool for +/- half an hour. Carefully use the foil overhang and lift the brownies out of the pan. Place this on a cooling rack and allow to cool for a further half an hour or until completely cooled.

Cut into squares and enjoy. You can store them in an airtight container for up to 4 days.

100g white chocolate, finely chopped
100g butter
200g brown sugar
