Roasted tomato and feta Pasta

Learn how to make the famous viral TikTok Roasted tomato and feta pasta. This pasta is almost to good to be true. This recipe is foolproof and it delivers a taste as if it took hours to make.

I have to admit, when my daughter first showed this recipe to me I was skeptical. Not to mention when I showed this to my very Italian husband. He really did not look impressed. 😂 You know, the Italians don’t like people to mess with their traditional pasta sauces (Or is that just my husband?)
I just had to try it.

This roasted tomato and feta Pasta comes together in less than an hour and the bonus? You will only need a few ingredients to make this delicious pasta. However, I added a few extra ingredients to the original recipe and wow!! The flavor combination is pure magic!

Roasted tomato and feta Pasta

Ingredients

240g Pasta, uncooked (Shape of choice)
4 cups cherry tomatoes
1/2 cup Extra virgin olive oil
5ml Oregano
1/4 teaspoon sea salt
1/4 teaspoon pepper
1 teaspoon garlic, crushed
200g Feta cheese, Full cream
1/4 cup Basil, fresh & chopped

Directions

Preheat the oven to 180ËšC and grease a oven-proof dish, large enough to hold 4 cups of cherry tomatoes.

Now add the cherry tomatoes to the dish add the olive oil and stir until all the cherry tomatoes are covered in oil. Now add all the other ingredients except the Feta cheese and basil. Stir until all the tomatoes are covered with seasoning. Add the feta cheese to the center on the dish in between the cherry tomatoes and flip it a couple of time to coat it with some oil and seasoning.

Bake for 30-25 minutes or until the cherry tomatoes have burst and the feta cheese melts.

In the mean time, while the tomatoes and feta is roasting, start to cook the pasta. In a medium size pot, bring water to boil and add 10ml salt. Once the water is boiling, add the pasta and cook until the pasta is Al dente. Drain the water and set the pasta aside.
Once the tomatoes and feta dish is done, remove from the oven and stir all the ingredients together. Using the back of a fork, carefully mash the tomatoes and feta together. Just mash until all the feta cheese is broken up and just over half of the tomatoes are mashed leaving some whole. Now add the fresh basil leaves and stir until combined.

Mix the roasted tomato and feta sauce into the cooked pasta and serve.
I served mine with some freshly grated parmesan cheese.
