Rooibos tea cookies

You know, how every house has its special secret remedy for an illness passed down from generation to generation? Well we also have a couple, but the most used one is probably rooibos tea for stomach cramps. This tea is full of antispasmodic compounds which helps to alleviate stomach cramps.

Anyway, apart from the awesome health benefits, we love drinking cup after cup. And of course we bake with it… 😋

Today I want to share a special rooibos cookie recipe with you. This recipe tastes like a typical shortbread biscuit, but a special twist of adding some tea leaves to the dough gives this cookie a fantastic flavor!!

Rooibos tea Cookie recipe

Preheat your oven to 180 ËšC and grease a baking tray.
This recipe makes +/- 24 cookies.

Ingredients

250g softened butter
80g Brown sugar
5 ml Vanilla essence
150g Self-raising flour
150g cake four
10 rooibos teabags
(leaves removed)

Method

In a saucepan lightly toast the tea leaves. Make sure to stir often to avoid burning.
In a mixing bowl cream the butter and sugar until light and fluffy now add the toasted leaves and vanilla essence and mix well again.
Slowly add the flours and mix until a dough forms. (A little tip: If you are using an electric mixer, use the paddle attachment , this will help to form the dough easier.)
Now roll the dough into small walnut size balls and place on your greased tray. Place them +/- 3 cm apart. Use the back of a fork and lightly press down onto each ball.


Allow the rolled & pressed balls to rest for +/- 30 minutes before baking them.
Bake them for 12 minutes or until golden brown. Remove from your oven and allow them to cool on a cooling rack.
Store them in an airtight container.

Enjoy these rooibos cookies with a delicious hot cup of rooibos tea. The flavor is just amazing!!
