Soft Ginger Cookies

There is that one ginger cookie recipe that just steals the show… This soft ginger cookies are just all that and more! The ginger flavor is soft and the addition of cinnamon and all spice just compliments the ginger so well.

Once you start to bake these cookies you will never buy a store bought ginger cookie again. There is just no store bought ginger cookie that can compare to this recipe. Not to mention that they are super easy to make.

Soft Ginger Cookies

Soft Ginger Cookies

Ingredients

2 1/3 Cups cake flour
2 Teaspoons Baking soda
Pinch of salt
2 Teaspoons ground ginger
1 Teaspoon Ground cinnamon
1/2 Teaspoon Ground all spice
Pinch of Black pepper
1 Cup white sugar
1/2 Cup brown sugar
1 Cup butter, Salted
1 egg, Large
1/3 Cup Golden syrup

Directions

Grease two baking sheets and set aside.

In a large bowl whisk together the flour, baking soda, salt, ginger, cinnamon, all spice and black pepper and set aside.

Using an electric mixer, beat together the butter, 1/2 cup of white sugar and the brown sugar. Mix until light and fluffy, scraping down the sides of the bowl as you mix.
Now slowly add the egg and beat until well incorporated.

Add the golden syrup and mix well. Regularly Scrapping down the sides of the bowl. Add all the dry ingredients and mix until just incorporated. Do not overmix. The dough will be very soft.
Cover the mixing bowl with cling wrap and place in the fridge for around an hour. In the mean time, heat the oven to 180 ˚C

The dough will be firm enough to roll into walnut size balls. Now roll the dough balls in the remaining 1/2 cup of white sugar. Place the dough balls on the prepared baking tray. Remember to leave enough space between the dough balls as they spread quite a bit.

Bake for 10 – 15 minutes.
Leave the cookies to cool slightly before transferring them to a cooling rack. The cookies will be soft, but will harden a bit more as they cool off.

Store in an airtight container.
