Banana Bread

Ingredients

  • 125 g margarine or butter
  • 1 ½ cups white sugar
  • 3 eggs
  • 5 ml vanilla essence
  • 1 cup mashed banana about 2-3 ripe bananas
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • 2 tbsp milk

Instructions

  • Preheat your oven to 180°C (350°F) and grease a loaf pan.
  • In a mixing bowl, cream together the margarine and sugar until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition.
  • Stir in the vanilla essence and mashed bananas.
  • Gently fold in the dry ingredients (flour, baking powder, baking soda, and salt) along with the milk. Mix just until combined—don’t overmix!
  • Fold in any add-ins (chocolate chips, nuts, etc.) if using.
  • Pour the batter into your prepared loaf pan and smooth the top.
  • Bake for about 1 hour, but check after 20-30 minutes—ovens vary, so test with a toothpick to see if it comes out clean.
  • Let it cool before slicing. Serve warm with butter or freeze for later!

Notes

Freezing Tip: Wrap the cooled loaf tightly in two layers of foil to keep it fresh. When ready to enjoy, just thaw and slice—it tastes just as amazing!
