Ingredients
125
g
margarine
or butter
1 ½
cups
white sugar
3
eggs
5
ml
vanilla essence
1
cup
mashed banana
about 2-3 ripe bananas
2
cups
all-purpose flour
2
tsp
baking powder
¼
tsp
baking soda
¼
tsp
salt
2
tbsp
milk
Instructions
Preheat your oven to 180°C (350°F) and grease a loaf pan.
In a mixing bowl, cream together the margarine and sugar until light and fluffy.
Add the eggs one at a time, mixing well after each addition.
Stir in the vanilla essence and mashed bananas.
Gently fold in the dry ingredients (flour, baking powder, baking soda, and salt) along with the milk. Mix just until combined—don’t overmix!
Fold in any add-ins (chocolate chips, nuts, etc.) if using.
Pour the batter into your prepared loaf pan and smooth the top.
Bake for about 1 hour, but check after 20-30 minutes—ovens vary, so test with a toothpick to see if it comes out clean.
Let it cool before slicing. Serve warm with butter or freeze for later!
Notes
Freezing Tip:
Wrap the cooled loaf tightly in
two layers of foil
to keep it fresh. When ready to enjoy, just thaw and slice—it tastes just as amazing!
