Banana Bread

We always have some bananas in our house. (Interesting fact: Bananas are the most widely consumed fruit in the world!!) They are a quick snack and packed with potassium. Potassium aids in preventing muscle cramps during exercise and that is only one of the many benefits. In short they are super nutritious and delicious to eat….

I think the only down fall here is that they sometimes ripen just way to quick, we just can’t keep up with eating them as they ripen.

So my solution….. Bake Banana bread!!! This recipe also freezes well, so stored correctly you can always have something on hand to pack lunch with. We simply just slice our bread and butter the slices. Simple and delicious!!!

INGREDIENTS:

125 g Margarine

1 ½ Cup White sugar

3 Eggs

5 ml Vanilla Essence

1 Cup Mashed Banana

2 Cups White Flour

2 Teaspoons Baking powder

¼ Teaspoon Baking Soda

¼    Teaspoon Salt

2 Table spoons Milk   

Pre-heat your oven to 180 ˚C

In an electric mixer, mix the sugar and margarine until a light pale color has been achieved. Now mix in the eggs one by one , mix well after each egg was added. Mix in the vanilla essence and mashed bananas.

Add in all the dry ingredients and milk . Mix well. Pour the dough into a prepared bread pan and bake for +/- 1 hour or until done. (Keep in mind that the baking times differ from oven to oven, test your bread after 20-30 minutes to determine how long you will still have to bake your bread.)

Service slices with some butter or freeze your bread for future use. If you want to freeze your bread, wrap your bread in two layers of foil, making sure that your bread is thoroughly covered.
