Finally… The ultimate Chocolate chip cookie!!

My search for the perfect chocolate chip cookie recipe led me to wonder where the wonderful chocolate chip cookie came from…

Well, It all started in 1938 by a chef called Ruth Graves Wakefield. She owed the Toll house Inn in the United states. There she took pride in serving good home cooked meals and of course took pride in making delicious desserts and treats.
The story goes that she by accident developed the chocolate chip cookie. She wanted to make a chocolate cookie and added some chocolate bar to the cookie dough. Thinking that this will melt, instead the chocolate chip cookie were born.
Playing around with the recipe and perfecting it by adding chopped nuts she came up with the all famous Toll house crunch cookie. I’m sure you must have heard or tasted these little star cookies.
Well, later this recipe made its way to her cookbook and so the fame just spread world wide.

Today there are hundreds if not more different types of chocolate chip cookies, each claiming to be better than the next. You can buy them pretty much anywhere around the world. All of them created with the same basic ingredients just all adjusted to suit the baker.

Searching for the perfect recipe

I have been looking for the perfect recipe for a long time now. I have one that I have been baking for a long time now, but I was never really happy with the end results.

To me, especially a chocolate chip cookie, should be crispy, chunky, full of chocolate and definitely not a flat lifeless cookie. Unfortunately the recipe that I have been using, although full of flavour, was one of those spread out flat cookies. Yeah it tasted great but the flatness and shape put me off.

I tried adding cornstarch to stiffen the dough up…. didn’t work.
Then, I tried keeping the dough in the fridge before baking it…. didn’t work.
I reduced the liquide in the recipe…. didn’t work.

So, you get the idea. It is time to part with this recipe.

Mom to the rescue…

Then my mother brought some chocolate chip cookies over one day… 😍 OH YES!! They were perfect! Trying not to consume much sugar, I only tasted one… Well, it turned to two. Then I had some coffee with another one and another… They are ADDICTIVE!

So, please give this recipe a try, and let me know how it went. To me this is definitely a keeper!

The Perfect chocolate chip cookie

Ingredients:

110g Butter, room temperature
50g Soft dark brown sugar
50g Soft light brown sugar
90g White sugar
2.5g Salt
2.5g Baking soda
1 egg
5ml Vanilla extract
200 g Cake flour
40 g Milk chocolate chopped
40g Dark chocolate chopped

Preheat your oven to 180˚C

Beat the butter and all the sugars, until light and fluffy. Add the salt and baking soda and mix through. Add the egg and the vanilla extract little by little to the butter mixture while mixing. Mix on high speed for another 2 minutes.
Add the flour and chocolate pieces to the butter mixture. Mixing it until it forms a smooth dough.

Divide the dough into 30g balls. (Use a kitchen scale to help you out. This is just to ensure evenly baking) Shape your 30g dough into balls and place them in the fridge for no less than 15 minutes. This will help your cookies retain their shape while cooking.

Remove them from the fridge and place them on a well greased cookie sheet or baking tray. Make sure to leave enough space between them so that they can spread without touching each other.

Bake them for 10-15 minutes or until golden brown.
Cool them on a rack and store in an airtight container.
