Peanut brittle

These are so delicious!! Crunchy peanut candy. You just can’t stop eating them. They are very easy to make, and you really do not need any special candy thermometers to make them.

What makes these treats so airy and light is the baking soda. After you add the baking soda, you will see that the mixture foams, this is actually a good thing. Only stir until combined or you might loose some of the airy and light texture that was created. The microwave settings that I use is 1000 watt.

A big tip is to get all your ingredients measured out and ready to use before you start, as you need to work very quickly in between the microwave sessions. Always remember to use oven gloves/mittens as the bowl that you use gets really hot in the microwave.

INGREDIENTS:

½ Cup Syrup

1 cup Sugar    

15 ml Margarine

5 ml Vanilla Essence

1 cup Unsalted peanuts (Cocktail peanuts)

5 ml Baking soda

Mix the syrup and sugar in a microwave safe bowl. Microwave for 5 minutes. Add the margarine, vanilla essence and peanuts. Stir in, until its combined. Microwave for 1 and a half minutes.

Using your oven mittens, remove the bowl from your microwave. Working quickly, add in the baking soda and stir until combined. Pour the mixture into a well greased bowl. ( 20 cm X 20 cm glass bowl works well) Wait until the mixture is cooled enough for you to handle and cut into squares.

Let them cool off completely and store them in an airtight container.
