Marry me cookies

So we are planning a lovely camping trip next week. I really get so excited…. The fresh air, relaxing with the kids and just hanging around while exploring. What more do you want? Well there is one thing more… Cookies to go with the first cup of coffee while watching the sun rise and listening to the birds singing. Now that sounds like heaven. 😋

I love baking all kinds of treats, especially when we go on holiday or on a camping trip. There is nothing better than homemade biscuits. One of my favorites to take with us, is definitely this trustworthy Chocolate chip cookie.

But for this trip, I want to make something different. Let’s say something that will surprise the family. And so I started my long online search for a good “surprise” cookie. Well, my Oh my….
I found it!!

Are you familiar with the marry me cookies? Well, they are also known as the “I want to marry you cookies” And let me tell you once you taste these babies, you will also want to propose!! 🥰

I played around with this recipe and found that adding a bit more cinnamon really made the flavors of this cookie pop. All I can say is: “enjoy this recipe”. It’s super easy to make, bakes quickly and you do not need any special equipment to make these.

This recipe makes 48 cookies depending on the size of the dough balls that you roll.

Marry me cookies recipe

Preheat your oven to 170˚C and grease two baking trays.

Ingredients

250 ml Butter
310 ml light brown sugar
125 ml white sugar
1 large egg
1 large egg yolk
5 ml vanilla essence
500ml cake flour
250 ml uncooked rolled oats
2.5 ml baking powder
2.5 ml salt
5ml ground cinnamon
250 ml White chocolate chips
250 ml Milk chocolate chips
(Keep some chocolate chips aside to decorate)
250 ml chopped pecans or walnuts

Method

Melt the butter over medium heat in a saucepan. Once the butter is melted add the sugars, and stir. Allow this mixture to cool down for 5-10 minutes.

Once the butter mixture is cool add the egg, egg yolk and vanilla essence.

Now add the flour, baking powder, oats, salt and cinnamon to the butter mixture. Mix well with a wooden spoon until combined. Add the chocolate chips as well as the nuts and mix.

Roll small-medium size balls by hand. Roughly 3 cm in diameter. If you kept some chocolate chips aside, you can now insert them on top of your cookies. Now place the rolled balls on a plate and refrigerate for +/- 30 minutes.

Once they are cooled, lay them out on your greased cookie tray and bake for 10 to 15 minutes.

They should have a light golden brown glow to them. Be careful not to over bake them. Once baked you can cool then off on a cooling rack and then store in an airtight container.

P.s. I baked these little biscuits about a week before we had to leave…. by the third day there were none left, and I had to re-bake them again. This time around I was clever and hide them away!!

So I had no proposals but I definitely had a lot of approval!!! 😁😁😁
