Crackerjack Cookies

Are you familiar with crackerjack cookies? I know these little cookies by a different name. A cup of everything cookies. Now, to be honest “a cup of everything cookies” really does not sound very appetizing. So I really like the name crackerjack more. The name says it all, it literally means amazing!

These cookies are really easy to make, it’s almost to easy. It has such amazing flavour that it is hard to believe that there are so few steps in making these cookies.
This cookie is crispy, has a hint of coconut and the peanuts in the cookie almost makes you wonder if this is a glorified peanut butter cookie.
So needless to say, these cookies does not last long in our home. Everybody just absolutely love them.

This recipe makes about 48 delicious cookies and bakes with in 8 minutes.

Crackerjack Cookies recipe

250 ml Butter, softened
200 ml White Sugar
200 ml Brown Sugar
2 Large eggs
10 ml Vanilla essence
1 ½ Cup white all-purpose flour
5 ml Baking powder
5 ml Baking soda
2 Cups oatmeal
2 Cups Rice cereal (like Rice Krispies)
1 Cup Shredded Coconut
1 Cup salted peanuts, chopped

Instructions

Preheat your oven to 180˚C and grease 2 cookie pans/sheets.

In a large bowl (I use my stand up mixer) Cream together butter and the sugars until light and fluffy. Now add the eggs and vanilla essence. Mix well.

In a separate bowl sift the flour, baking powder and baking soda together. Now add the flour mixture slowly to the butter mixture while mixing good after each addition.

Add the rest of the ingredients to the mixture. Mix slowly until combined. You do not want to crush the rice cereal.

Drop heaped tablespoons of dough on your greased baking tray. Slightly flatten the cookies with the back of your tablespoon. Bake them in your preheated oven for 8-10 minutes or until golden brown. Once baked you can transfer them to a cooling rack and allow them to cool completely.

Store them in an airtight container, and enjoy!!
