The many uses for lime

It’s that time of the year where the lemon and lime trees are full of fruit. Are you left with an endless supply of lemon or limes? Even after the neighbors helped themselves to bags full?
Why not check out this post https://www.livingdelish.com/lemon-or-lime/ for some other great uses for these little citrus fruits. Of course the other more delicious option is always to bake up a storm using some of the fruit. Why not bake a sweet and fruity Key Lime pie?

Key lime pie along with lemon merengue https://www.livingdelish.com/lemon-meringue-pie/ is one of my favorites. Although it is quite sweet I can not help myself to a slice 😊 This recipe is a easy to make one. It does not take a lot of time to prepare, but the baking and cooling time does add up to a bit of time. Why not spoil your family and friends to this wonderful key lime pie.

Key Lime pie recipe

This recipe makes 1 large pie.
Preheat your oven to 180ËšC and grease a 20cm springform tin. Line the base of the tin with baking paper.

Ingredients

200 g Digestive cookies
15 ml Castor sugar
100 g butter, melted
4 eggs, beaten
385 g (1 tin) Condensed milk
160 ml cream
Zest and juice of 6 limes & extra for decoration

Instructions

Crush the digestive cookies until fine crumbs are present. (You can use a food processor to speed this process up. Otherwise you place your cookies in a clean ziplock sandwich bag and seal. Use a rolling pin and crush the cookies until fine)

Now add the sugar and melted butter to the crushed cookies. Combine very well. Press the cookie mixture into your prepared tin. Fill the base of the tin as well as +/- 3cm up the sides of the tin.
Place in your fridge until set or firm.

Now whisk together the eggs, condensed milk, cream, lime zest and juice until smooth.

Pour this mixture into your biscuit crust and bake for about 40-45 minutes. Or until the mixture is just set.

Allow to cool.
Once cooled Garnish with extra lime wedges or thin lime slices.
