Peach Cobbler

Winter in setting in fast. I don’t know about you, but I really enjoy a good baked pudding in winter. The comforting taste of a sweet pudding just hits the right spots and seems to heat you from the inside. This Peach cobbler is just that…. Comfort food!
The combination of peaches and a sweet cinnamon topping is simply delicious!

Peach Cobbler

I’ve been really in the mood for peaches these days. But being winter they are very hard to find, and if you do find them they are super expensive. So the best bet to soothe this craving – canned peaches.
Now imagine a baked pudding that has canned peaches in – Yummy!

This recipe is super fast to make since it uses canned peaches. It comes together with in 10 minutes and bakes around 20 – 30 minutes.

Peach Cobbler

Preheat your oven to 180 ˚C
Grease an oven proof deep dish +/- 20 cm

Ingredients

1 can of peaches
6 Tablespoons of Butter
1 Cup Sugar
1 Cup all purpose Flour
2 Teaspoons Baking powder
1/4 teaspoon salt
1 Cup Milk
30 ml Cinnamon Sugar (See notes at end of recipe)

Directions

Drain the peaches but reserve 1/4 cup of the syrup. In a saucepan bring the peaches and the syrup to boil. And set aside.

Place the butter in your greased baking dish and place in the oven until the butter has melted. Carefully remove from oven when melted.

While the butter is melting start to mix the batter. Mix the flour, baking powder, salt, sugar and milk together using an electric mixer until smooth.

Now add your batter to the melted butter and top of with the peaches. Spoon any juices left in the saucepan over the dough.

Sprinkle cinnamon sugar generously over the dough.

Bake for 20 – 30 minutes or until set and golden brown.

Serve warm with custard, whipped cream or ice cream.

*Notes:
To make your own Cinnamon Sugar, simply Mix 50 ml White sugar with 5 ml grounded cinnamon. Mix until well combined. Store in an airtight container for up to 6 months.
