South African Melkkos

Here is South Africa we have plenty of great desserts to choose from. But have you ever heard about Melkkos? The word “melkkos” directly translate to Milk food.
Now to be honest milk food really does not sound very appetizing. Melkkos is a sort of lumpy, porridge like, milky dessert. Looking at it, it almost looks like a thick white sauce, just sweetened and spiced up with some cinnamon. Well, that also doesn’t sound to great. Just trust me, try it once. You will truly be amazed with the taste.


Mmmm… Delicious. There is only one secret here. Serve your melkkos with lots and lots of cinnamon.

This is a great dessert to serve during the cold months. It is truly a pure comfort food. I think it’s just the combination of the milky porridge like pudding and the great taste of cinnamon that makes it so great.

The traditional recipe is made with plenty of milk and some flour. I changed my original recipe, added in a bit of a twist. You see, I also really like Sago pudding. This is another firm favourite here in South Africa.

In any case, back to my twist… Playing around, I discovered melkkos/sago pudding. Both of my favorites combined!!

This recipe serves 4-6 people. You can make this recipe within 15 minutes.

The original Melkkos recipe

Ingredients

310 ml (175g) Cake Flour
3 ml baking powder
2 ml Salt
30 ml butter
2 Litres Milk
5 ml Vanilla essence
10 ml ground cinnamon
2 strips of Orange peel rinds (each +/- 5cm long)
30 ml sugar (Replace with Xylitol for a sugar free option Ratio 1:1)

Methode:

  1. Sift four, baking powder and salt together. Rub in the butter until the mixture resembles breadcrumbs.
  2. Now, heat the milk, vanilla essence, cinnamon, sugar and orange peel rinds. Slowly bring to boil. Once it starts to boil, reduce the heat and remove the Orange rinds.
  3. Now add in the flour mixture. Make sure to keep stirring because it can burn easily.
  4. Keep stirring for 5 minutes. Until cooked.

Serve warm. Sprinkled with some cinnamon sugar before serving.

Tips: Make your own cinnamon sugar by mixing +/- 125 ml sugar with 5-10 ml of ground Cinnamon.
You can always cook your melkkos in the microwave. This way it would be less lightly to burn. Just remember to stir frequently.

The twisted Melkkos recipe

Using all the ingredients listed above plus
125ml of sago

Methode:

Soak the uncooked sago in just enough water to cover it. Let this mixture sit for at least an hour or two. Drain and set aside.
Start to follow the above mentioned step 1 once completed start step 2, but also add in your soaked sago along with all the other ingredients.
Follow all the other steps mentioned in the original recipe.

Tip: if your mixture is to stiff/thick. Add in more milk. If it is to runny, add in more flour. I find the quantities just perfect. But you might prefer a more runnier or even thicker consistency.
