This Pineapple cake slices is true tropical bliss. The delicious flavor combination of pineapple and coconut baked until golden brown on top of a soft and airy cake base is just a match made in heaven.

With little effort this pineapple cake slices will be everyone’s new favorite tea time treat. The cake is moist soft and airy, it almost just melts into your mouth. And the combination of pineapple and coconut just complements this cake.

This is an old time classic in our family and the recipe is passed down from my mother. I hope that you will enjoy it as much as what we do.

Pineapple Cake slices

Ingredients

Base:
2 Eggs
300 ml Cake flour
250 ml Sugar, white
10 ml Baking powder
150 ml Water, Cold
Pinch of salt

Topping:
1 tin (410g) Pineapple pieces, drained and chopped into smaller pieces (reserve 1/4 cup liquid)
120 ml Butter, salted
200 ml Sugar, White
2 egg
300 ml Coconut, shredded
15 ml Vanilla essence

Directions

Preheat the oven 180˚C. Grease a 25 X 40 cm oven proof dish and set aside.

For the base:
Beat the eggs and sugar together until light. Now add the flour, baking powder and salt while alternating with the cold water. Mix slowly until combined. Now increase the speed and mix for a further 2-3 minutes on high speed.

Pour the batter into the prepared dish and bake 15- 20 minutes or until the base is baked thru out. (I find that the cake is usually baked anything from 12 minutes onwards) To test you can insert a tooth pick into the base. If it comes out dry or with very few crumbs sticking to the tooth pick, the base is baked.
Remove the base from the oven and using the reserved pineapple liquid, drizzle evenly over cake. Now spread the chopped pineapple evenly over the base and set aside.

For the topping:
Add the butter, sugar, egg, shredded coconut and vanilla essence into a pot. Allow the butter to melt over medium heat while stirring continuously. Once melted reduce the heat to a simmer (not boil) while still stirring continuously. Simmer for 5 minutes.

Now pour the topping over the baked base spreading it evenly and place back into the oven. Bake until the topping is light golden brown.
Remove from oven, and allow to cool in the baking dish.

Slice the Pineapple cake slices into blocks and serve.
